Bitter greens are an amazing way to start a meal. They send the signal of satiety (reducing the amount you consume), the prepare the body to digest, they provide important factors to feed your microbiome and BOOST YOUR IMMUNE SYSTEM plus they taste so GOOD! Bitters have been found to support upper respiratory immune response!

Dressing:
2 tablespoon Tbsp. finely minced raw shallot or onion (optional) - antiviral
1 tablespoon Tbsp. plus 2 tsp. Dijon mustard (optional)
1 tablespoon Tbsp. red wine vinegar or lemon
1⁄2 teaspoon tsp. grated garlic - antiviral + immune balance + anti-inflammatory 

1⁄3 cup cup plus 1 Tbsp. extra-virgin olive oil - protect your lungs + anti- inflammatory

Sea salt and freshly ground black pepper to taste

Mix well with....
12 cups cups lightly packed bitter greens (such as chicory, escarole, radicchio, frisée, and dandelion), torn into large pieces. Enjoy!
